First, it must be said that just like quinoa, amaranth has been cultivated and used for more than 3,000 years. Beloved especially by the ancient peoples of South America (Inca and Maya in particular), who used it in both food and religious rituals, today it is back on our tables, thanks to its incredible nutritional properties.

What are they? First of all, it is extremely rich in protein, as well as containing valuable elements such as essential amino acids, fiber, minerals and vitamins. Another special feature is that the plant adapts very easily to very different soils and climates.

But of amaranth you don't just eat the seeds (with which you can also make very small popcorn). In fact, its leaves are highly valued both for their flavor and for their high iron content.
