A sweet Christmas recipe for the whole family

Now the Christmas holidays are in the air...
We have thought of a recipe for the whole family: a very easy dessert (also gluten-free) to be prepared all together and served with a nice hot cup of tea, to face these early cold weather with some warmth.
Here is everything you will need to make your own lemon and ginger cake that with these scents and flavors will give a colorful and sparkling note to your Christmas celebrations.

Ingredients for 6-8 people:
200 g whole brown sugar
120 g lemon juice
30 g gluten-free flour
12 lemon and ginger teff rice cookies
5 tablespoons melted butter - 3 eggs - 1 yolk
lemon zest - salt - gluten-free powdered sugar - slivered almonds

Procedure:
Preheat the oven to 180 °C. Grease a cake pan (ø 22 cm). Next whisk the cookie powder and add the melted butter and press the mixture into the bottom of the baking pan. Beat the eggs and yolk, add the flour, sugar, lemon juice, a little grated zest and a pinch of salt. Pour everything over the base and bake for 20-25 minutes. Top with almonds and powdered sugar.
