Let's warm up with exotic pumpkin and carrot velouté with amaranth seeds

titolo post

If you don't have a lot of time to devote to cooking, but still want to bring a light, tasty and nutritionally balanced dish to the table, this is the post for you.

Today, in fact, we present one of Germinal Bio Vegan products, our line of vegan, gluten-free and organic ready meals. In particular, we put the focus on the creams, suitable for all occasions, whether for a light dinner or to start a multi-course meal. Among these, in these early days of autumn we like to recommend the Vellutata Zucca Carote con Genzero e Semi di Amaranto, colorful and flavorful, combining traditional Italian ingredients, such as pumpkin, with exotic flavors, such as ginger or amaranth.

We would like to take this opportunity to remind you that ginger is an excellent tonic and digestive agent, which we love both for its spicy taste and its properties.

Today we recommend a quick and tasty combination to complete this velouté without taking too much time in the kitchen. Follow our recipe.

Pumpkin Carrot Soup with Amaranth Seeds and Tofu Flakes Croutons

Ingredients:

  • Pumpkin Carrot Soup with Amaranth Seeds Germinal Bio
  • Germinal Bio Gluten-Free Crackers
  • Germinal Bio Pumpkin Seed Oil
  • Tofu Flakes

Preparation:

First, prepare croutons with tasty Germinal Bio Gluten-Free Crackers, made from chickpea flour, rice flour and extra virgin olive oil. Sprinkle them with a good amount of tofu flakes (very reminiscent of cottage cheese) and, if desired, some fresh herbs (chives or parsley), then set aside. At this point, heat the pumpkin and carrot soup with amaranth seeds well. Pour it into serving plates, top it with a drizzle of Germinal Bio Pumpkin Seed Oil, which will enhance the flavor, and bring it to the table along with croutons with tofu flakes.

Et voila, in just a few minutes you will have prepared a tasty and light dish that nourishes health! Enjoy and see you next recipe.
