Quinoa Shiitake Mushroom Salad for a quick, healthy and tasty lunch

There are days when there is really no time to get to the stove, even for the quickest preparation, and days when it is too hot to taste anything but a fresh, light salad. Today we present Shiitake Mushroom Quinoa, a salad that mixes the delicate sweetness of carrots and spinach with the strong - and somewhat exotic - taste of shiitake mushrooms, mushrooms of Asian origin, widespread mainly in Japan and China, but increasingly consumed in Western countries as well. So here are some tips on how best to propose it.

Verse your vegan salad made with quinoa, carrots, spinach and shiitake mushrooms in a large bowl. Dress it with a drizzle of Germinal Bio Hemp Seed Oil, a pinch of sea salt and, to accentuate the exotic note, top it with a few grains of Sichuan peppercorns, first toasted for a few moments in a pan and then pounded with a mortar.

They are all good for a healthy and healthy diet.

We finally recommend that you serve the Quinoa shiitake mushroom salad with Vegan Spelt Crackers or Gluten-Free Crackers, made with chickpea and rice flour.
