Spelt is a cereal rich in important nutrients useful for the well-being of our bodies. Widely used in Roman times, it has seen a slow decline over the years until today, where it is becoming increasingly important, thanks mainly to organic farming. Why this? Because spelt grows even in poor soils, is resistant to moisture and cold, and does not require special fertilization.

Is there only one type of emmer?

Well no. There are as many as 3 types of spelt grown:

  • Small spelt: originating in Turkey, small spelt is the oldest variety
  • . Medium spelt: this is the most cultivated and widespread type in Italy because it is adapted to our temperate climate and has a high food yield
