Our cereals come from short and guaranteed supply chains.
The enhancement of supply chains represents for us a long-term strategic objective, in line with the principles of the circular economy. We collaborate with short, guaranteed, and sustainable supply chains, protecting producers and favoring, whenever possible, 100% Italian raw materials.
To support agricultural businesses in our country, we have established supply chain agreements that ensure fair compensation, proportionate to the quality of the raw material.
The soft wheat supply chain
Soft wheat is characterized by a spike with short or even absent awns (the terminal filamentous parts); its grain breaks easily and appears opaque, rounded, and crumbly. The flour obtained from milling soft wheat is the classic “white flour” with small, white granules.
Origin: Our organic soft wheat mainly comes from Emilia-Romagna and Lombardy. More precisely, it is grown in the Ferrara and Pavia areas. These are regions particularly suited for soft wheat cultivation thanks to their soil characteristics and favorable climatic conditions.
Processing: Cereal crop sowing usually takes place in October-November, while harvesting is done in June and July. All phases of soil preparation (plowing, harrowing, etc.), as well as the stages following sowing, are strictly supervised and monitored by agronomists to ensure a reliable and ethical certified organic product. Afterwards, the seeds are processed and milled in the mill to obtain the flour, which will then be one of the ingredients in some of our products.
The corn supply chain
Our corn supply chain is short and 100% Italian. What does short supply chain mean? Simple: few steps from the raw material to your table. Our organic corn is mainly grown in Piedmont, where the sowing, harvesting, and processing of the kernels take place.
The rice supply chain
Rice flour is an excellent ingredient to include in your diet due to its beneficial properties; it is naturally gluten-free, making it ideal for celiacs or those who suffer from intolerance to this protein.
Origin: Our rice is grown in Northern Italy, mainly in Lombardy, where it finds its ideal microclimate in areas with large water basins and abundant water availability. The winter frost in the North helps restructure the soil and make it more fertile.
Cultivation: Rice is sown in April and harvested between August and September; afterwards, it is sent to the rice mill for husking (removal of the outer and hard part of the grain).
The spelt supply chain
Our organic spelt comes from the Ferrara area, where the microclimate of the Po Delta gives each grain a unique taste and extraordinary nutritional value. The soils are carefully selected to obtain quality seeds.
