Fagopyrum esculentum (buckwheat) is a herbaceous plant native to the Himalayas, which was spread to the West by the Saracens, a historical passage that is still echoed in its common name. Its gluten-free seeds are used to produce a flour renowned for its richness in nutrients such as protein, vitamins and minerals.
