
Teff, the enormous benefits of a tiny grain

Among our many special ingredients, we can definitely mention TEFF!
This is a gluten-free cereal native to east-central Africa.
It is prized for its high intake of vitamins and fiber, but especially essential amino acids, in amounts similar to those found in Quinoa.
The excellent nutritional value makes it a perfect food with which to supplement poor or gluten-free diets.
A very small curiosity.
It owes its name to the popular Ethiopian term Teffa, "lost," because during harvest these very small grains, less than 1 mm in diameter, very easily escaped from the hands of farmers.
Similarly to amaranth, since it is such a small grain, in order to grind it it is impossible to separate the bran from the seed, so all parts of the grain are included and mixed to create the flour, which is inevitably 100% whole grain.
Teff can be used in the kitchen to enrich soups and salads, as a base for a porridge or in the form of flour, such as that used for our Germinal Bio Lemon & Ginger Teff Rice Cookies, with an intriguing and spicy taste, or the Teff Rice Macaroni!
