Gluten-free spaghetti omelette

The spaghetti frittata is a traditional Neapolitan recipe (in Campania they call it frittata di maccheroni). This preparation is ideal when organizing a picnic or an out-of-town trip, but it can also be an inviting appetizer or a hearty main course.

Pasta frittata has ancient origins and originated from the need to recycle leftover pasta, but the result is also excellent with freshly cooked pasta.
