Soused zucchini with Germinal Bio apple cider vinegar

The carpione originated as an ancient method of preserving freshwater fish (especially trout) and then over the centuries became a traditional recipe-especially from Piedmont-used for vegetables (and more) as well. In this hot summer there is nothing better than a tasty dish of zucchini in carpione, perfect as an appetizer or as a side dish.

It is usually marinated in wine vinegar, but we offer an alternative version with the milder Apple Vinegar Germinal Bio.

Zucchini in carpione are basically zucchini "sticks" fried and then seasoned with a sage-flavored marinade. Follow our advice and try this recipe too!
