Spinach and quinoa burger with vegan ginger, onion and red turnip mayonnaise

Ingredients

For the mayonnaise

  • 50 ml unsweetened soy milk
  • 110 ml organic sunflower oil
  • 1 teaspoon of mustard
  • 1 tablespoon apple cider vinegar
  • Salt
  • A small piece of grated ginger root
  • A pinch of turmeric

For the sandwich
